Abuelo's Fundido del Mar

Shrimp , scallops, mushrooms, roasted red peppers and poblano strips sautèed in a white wine sauce and folded with melted cheese.

Queso Fundido
2 cups of Mexican cheeses, your choice
Mix it, and put in a shallow baking dish (5 inch diameter) Bake in the oven at 375 for 8-10 minutes.

Del Mar
6 pieces medium sized shrimp
2-3 scallops, diced
1 roasted red pepper, sliced in strips
1/2 poblano pepper, seeded and sliced into strips
3-4 fresh mushrooms, sliced
1/4 cup white wine
1 teaspoon chipotle in adobo puree (can)

Add the wine to a saute pan. Cook the shrimp and scallops in a medium hot pan (1 minute or so) add the chipotle puree, mushrooms, and peppers.  Cook all together for one more minute or two  and serve on top of the melted cheese.
